Can I host more than one test mirror ?

You can host up to two speed test mirrors from the same location. This helps distribute the bandwidth and provides some redundancy.

There is very limited benefit to users having more than two mirrors from the same host/network, so we try to keep it limited to two mirrors per location at a time.

If, on the other hand you can provide test mirrors from different geographic locations, you can still use the same host as a back link on all mirrors.
