Great deal recently on 2lb bags of sweet mini bell peppers.
Yellow, orange, and red.

Been doing stir fry with rice and cous cous, baking with a lot of onion and garlic, sauteed on top of fish, stuffed with mushrooms (too small to work well).

Any suggestions?

I dig stuffed peppers.....

Really want to make some soups, but no food processor.

Just tried baked with a bit of mozz, garlic, and smoked salmon, dunked in hummus.

This will be interesting:

Garlic and mushroom cous cous.

Sauteed carrot, broccoli stem, raw almonds, raw peanuts and raw pumpkin seeds.
After about 5 minutes: broccoli flower, peppers, garlic. Still trying to find a damn onion but most of left them at work :D

Simple is best. Cut up the peppers (French cut), toss in a roasting pan, cover with olive oil & a little salt, mix a bit, pop in the oven or broiler. Good as a side dish, on sandwiches, by themselves on an Italian roll, diced with eggs, etc.

just get them cold and chunk them up and eat the as a side with a meal with season salt on them,or dip in a good ranch dressing.

Roast them and they'll keep in the fridge for up to a week. Great on sandwhiches and a ton of other things

You should also follow the other recommendations and use them to make fajitas.
