Win XP Pro, how do i get the "right click open with" option to show up?

Hold down shift and right click.

Open With is still there in XP, but not always directly in the context menu.

3. Right-click a file, and then click Open With. If Open With is not available, click Open.

If a program is already associated with a filetype, you can left click once (select) the file and while holding down the shift key right click the selected file and Open With will appear in the context menu.
No one has any right to force data on you
and command you to believe it or else.
