Slow cooked BBQ ribs recipe...Yo JCOS, and others who inquired about that recipe!
OK, for those who inquired about the slow cooked ribs and beans I said we were cooking, when several commented on the crock pot in my house pictures...
Here's the recipe the ol' lady tried from the Dec 2002 edition of "Southern Living". She modified it a bit for our tastes.
SPICY-SWEET RIBS AND BEANS
2x cans of pinto beans
4x lbs country-style pork ribs, trimmed
1x teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper (we did fresh ground, and like a whole teaspoon)
1 medium onion, chopped (I think we did two of them)
1x 10.5 oz jar of red jalapeno jelly (we couldn't find, so we did a small jar of red jalapeno's that we sliced up into little rings 'n shapes
1x 18 oz bottle hockory flavored BBQ sauce
1x teaspoon green hot sauce (we have Chef Emerils)..we did a little more, like several good shakes.
Also what she added....
*We have a huge bag of smoked, dried, hot chile peppers...they are whole...around 6 inches long...big suckers around the size of large pickles. We always take a few, and have a small coffee grinder that we pulverize them in to make fresh chili powder. Watch out when doing this, the stuff gets air born, and you'll be sneezing with a burning nose. We ground up I think 4 of them peppers.
*Mustard powder...like a 1/2 teaspoon
*Onion power...another 1/2 teaspoon
The night before....combined all the dried seasonings (salt, pepper, powders, etc) and the pork ribs into a large zip bag...shook it around good to coat the meat....and let it sit overnight in the fridge...to marinate.
The next afternoon...warm up your oven on broil...
Place the beans in the slow cooker (crock pot),
Lay the meat out on a broiling pan...and broil them about 5 1/2 inches from the heat...for 15 - 20 minutes or so..until browned, flipping them over in the middle. When done, place ribs on top in the crock pot, mixing the onions in between them.
Combine the jelly (if you found it, if not, the diced jalapeno's), the BBQ sauce, and the hot sauce in a saucepan, cook over low heat until all blended, etc. Then pour over the ribs.
Cook on low for 9 - 10 hours.
Eat with lots of beer.
The next morning, make sure your bathroom exhaust fan works well, or you have at least a good air freshener.

Cat, you da man!! Gonna try this over the holidays. If anyone hears thunderous explosions to the east of Toronto and they are having the military evacuate the general population downwind, you'll know we just had supper...

Hmmm, call the UN and tell them to get their inspectors out of Iraq, and tell George Dubya I'm taking a vacation (after having Cat's recipe for supper). Baghdad first, then Kabul, then Pyong Yang. I'll send postcards to anyone that wants one of the aftermath (not for the faint of heart or weak of stomach).
