For headphones ya Sennheiser is great, I have the Sony V700s, good stuff there too!
I assume by headset you mean a mic built in, right?

I have a pair of the Sennheiser headphones. They are great. I use them for gaming and listening to CDs if I'm sitting at the computer.
Mine are the 3.5mm plugs, so I don't know about USB. The sound quility is very outstanding for the price.

I use a set of plantronics (nonusb) and love them for gaming and music.

USB headseats are quite good actually, my friend has a set and they sound great and the voice quality is top notch. I don't know the brand though, I think plantronics?
