What the hell? Do people really eat that stuff??? From the looks of it they were going to make some kind of stew or "hamburger helper" stuff. *blech*

It's not to bad. My grandfather was a meat cutter. Nothing went to waste in his kitchen.

My grandfather ate pickled pigs feet from time to time. I can't do it. How did you eat the brains, fried up or in some sort of stew?

Make soup. Pork brain soup, it's known to increase brain power or something. People drink it during midterms and exams just in case.

My Parents Used To Eat It...

Post by Spicer »

I didn't though...LOL!!

Head Cheese
Head cheese, also called souse and brawn, is a jellied loaf or sausage. Originally it was made entirely from the meaty parts of the head of a pig or calf, but now can include edible parts of the feet, tongue, and heart. The head is cleaned and simmered until the meat falls from the bones, and the liquid is a concentrated gelatinous broth. Strained, the meat is removed from the head, chopped, seasoned and returned to the broth and the whole placed in a mold and chilled until set, so it can be sliced.

I wonder if they switched to pork after the mad cow thing...

I would eat it, almost whatever they did with it, but I like trying any new food at least once.

I've seen people eat menudo, which is cow brain soup I think. The mexicans think it prevents hangovers....

Menudo does not usually have brains in it. It is tripe that is the weird one in Menudo. Tripe I believe is one of the layers of the stomach. Menudo is good soup btw. Lengua (tongue) tacos are excellant if you have not tried that.

Also if you order cabeza at a Mexican place it is not brains. It is the meat off the skull. I have heard if your worried about mad cow disease not to eat the cheeck meat of cows for some reason.

Tripe...A big ingredient of Haggis.....Bobby Burns Fav .....The rubbery lining of the stomach of cattle or other ruminants, used as food..... ;)

Traditional Haggis
1 sheep's pluck (stomach bag)
2 lb.. dry oatmeal
1 lb. suet
1 lb. lamb's liver
2 1/2 cups stock
1 large chopped onion
1/2 tsp. cayenne pepper, Jamaica pepper and salt
Boil liver and parboil the onion, then mince them together. Lightly brown the oatmeal. Mix all ingredients together. Fill the sheep's pluck with the mixture pressing it down to remove all the air, and sew up securely. Prick the haggis in several places so that it does not burst. Place haggis in boiling water and boil slowly for 4-5 hours. Serves approximately 12

I can already see where that's going to come in handy.

Tripe is awesome, I love it. Although I prefer some euro-styles of cooking it (for once, as most european cooking methods I find very boring, esp middle and northern europe).

Anyways...pickled tripe, stewed in whole tomatos, a tiny bit of garlic, a light splash of olive oil and italian herbs...MMmmm....man on man I can eat huge volumes of that.

Fresh tripe I'm not as crazy about, but I've had lots of it, mainly in spanish style stews. Ex wifes mother used it quite often, Puerto Rican.

Back to pork brains..I've not tried that.
