Since January, I have noticed several strange things with my phone when I watch videos, my screen will fade out to black almost as if there’s been a screenshot taken

Just have the Apple Store reset your phone, and check for hardware issues.
Uninstall apps you don't use.
Change passwords on Uber/etc.
