Does having more DIMMs spread out the stress and make for better overclocking?
Do more mem modules = better overclocking???

Nope, the more DIMMs you got, the worse chance of reaching high speeds, cuz each 'n chip on the DIMMs MUST run stable @ the specified speed, more chips = more chances of being unstable.
Try different DIMM slots too, believe it or not it DOES make a diff

Also
some ram sticks can't reach a certain fsb or will hold back and hinder your overall performance. (I.E If you have stick that is branded(Let's say micron) and a stick of crucial, the micron might hold you back because it's won't run at 140fsb, while the crucial will.)
