Going SLI 3X

I have an EVGA mobo that will accept 3 - 8800GTS video cards. I have the 3 cards. Since I've never researched the pros and cons I thought someone here might enlighten me. All the cards are new and in the box with the same specs.
What can I expect from a 3 way SLI setup as opposed to upgrading to a new single card? If possible I'd like to keep this board and the 3 vid cards.
Gaming would be my first consideration. Watching DVDs on a 1080p TV would be second.
