Do they, and/or can they hold you accountable if something goes wrong and you (or an unseen problem while you're working on it) wipes out important files etc. Can they sue? Do they?

Can you just say "sorry about that" and leave? lol
Seriously, what happens in that scenario?

Most corporations have their own internal IT staff, and basically if you mess up that bad you are fired. If they found out you did it on purpose not only can you be sued, but you can be arrested and go to jail as well.

You can be held liable for data loss IF IF IF you do not have a disclaimer in a contract to protect yourself. This is why contracts are important. Prior to beginning any work on business systems, have the apropriate person SIGN a contract. The contract should state what work is to be done, estimated or actual costs and a general liability clause. You can find generic contracts online and edit them to your choosing, or grab them at the local office supply store.

Face it, you likely would not get called to work on systems that are running smoothly! Thus there is always a risk to work on computers in need of repair or cleanup. Business systems have important data on them and backing up is critical PRIOR to doing repairs.

If the contract IN WRITING states something about data loss then at least it forces the client to implement a backup system, & if none exists then you do it and charge for it. And cover your arse in writing.
No one has any right to force data on you
and command you to believe it or else.
If it is not true for you, it isn't true.
